Coconut marzipan corners (gluten-free, dairy-free, with alcohol)

Another type of cookie that should not be missing at Christmas are coconut marzipan corners. Here is the gluten- and dairy-free version of the original recipe from my mom’s cookbook.

Ingredients

  • 1 egg

  • 65 g vegetable margarine

  • 65 g coconut sugar

  • 1 packet of vanilla sugar (or some ground vanilla)

  • 1/2 tsp baking powder

  • 30 g corn starch

  • 60 g tapioca starch

  • 45 g rice flour

  • 10 g corn flour

  • 3 g ground psyllium husks

  • 1/2 tsp locust bean gum

  • 200 g marzipan

  • 3 tbsp apricot jam

  • 2 tbsp apricot brandy or orange liqueur

  • 100 g grated coconut/ (possibly a little more)

preparation

Preheat the oven to 180° C.

With Thermomix: Add egg, margarine, coconut sugar, vanilla sugar, baking powder, corn starch, tapioca starch, rice flour, corn flour, psyllium husks and locust bean gum to the mixing bowl and knead for 2 minutes/speed 3 to form a short pastry.

Without Thermomix: Put egg, margarine, coconut sugar, vanilla sugar, baking powder, corn starch, tapioca starch, rice flour, corn flour, psyllium husks and locust bean gum in a bowl and knead to make a short pastry.

Roll out the dough about 0.5 cm thick on a baking sheet lined with baking paper or press apart with a spoon dipped in water. The amount makes about 1/2 tray. The photo shows twice the amount of dough. Short pastry on the tray

Mix the marzipan, apricot jam and liqueur to a homogeneous mass and spread evenly on the short pastry. Jam topping

Spread the grated coconut evenly on the jam layer. All layers with coconut

Bake in a preheated oven at 180° C for about 20 minutes. Make sure that the short pastry is done! Baked dough

Let it cool, it doesn’t have to be completely cold, cut off the edges. Then cut the dough into approx. 5-6 cm squares. The squares are then cut again diagonally. Finished cookies

Tip: The heat distribution in my oven is not optimal, so I use more grated coconut. Then I can brush off the darker ones and make sure that the dough is through without the cookies looking burnt.
